Roasted chickpeas, nutty, crunchy, savory and addicting, a healthy snack and are simple to make. It is packed with fiber, zinc, folate and protein. You can use any spices you like. My favorite is with curry powder!

Prep: 50 mins

  • 2 c. organic chickpeas.

  • Avocado oil spray

  • 1 tbsp curry powder

  • 1 tsp salt

  • 1 tsp ground cumin

  • 1 tsp black pepper

  • 1 tsp chili pepper powder

  • Step 1: Add dried chickpeas to a large bowl and cover with several inches of water. Soak it 8 hours or overnight. Drain and rinse.

  • Step 2: Add the soaked, drained and rinsed chickpeas to a large pot. Cover with several inches of water and bring to a boil. Reduce the heat and simmer for 45 minutes until they fully cooked.

  • Step 3: Preheat oven to 400 °F. Drain chickpeas in a colander and let them dry completely. Pat dry with a paper towel if needed,

  • Step 4: Arrange on a baking sheet in a single layer and roast for about 45 minutes (all ovens are different so make sure they don't burn). They will be golden brown and crunchy on the inside when done, not moist.
