Hummus is a trendy dish these days. Hummus has lots of health benefits; one of the benefits of hummus is that it can keep your digestive tract regular, it is an effective way to get more fiber into your diet. 1 c. cooked chickpea
One small lemon
One garlic clove, chopped
½ c. tahini, well mixed
½ tsp. Kosher salt
¼ tsp. Ground black pepper
¼ tsp. ground cumin
·2 tbsp. extra-virgin olive oil, plus more for drizzling
2 tbsp. water
Chive for serving
Step 1: Combine cooked chickpeas, lemon juice, garlic, tahini, salt, pepper, cumin, and water in a food processor. Process until smooth, about 1 minute.
Step 2: With the motor running, stream in 3 Tbsp. Oil, then continue to process until hummus is very light and creamy, about 1 minute longer.
Step 3: Transfer hummus to a dish, top with chive, and drizzle with more olive oil.
Step 4: Transfer to an airtight container and store in refrigerator.
