This Super Oatmeal Bowl is my favorite breakfast/lunch option. This nutrient-dense meal is gluten-free, antioxidant, high in protein and soluble fiber that keeps your gut bacteria happy and cholesterol down. It contains a bounty of minerals like manganese, selenium, phosphorus, fiber, magnesium, and zinc. I bumped up the protein and fiber by adding heart-healthy seeds and berries.
Prep: 10 mins
1 cup rolled oats
3 cups water
1 tablespoon chia seeds (or flaxseeds), it can also be a mixture of two
1 cup kale + 1 cup cabbage (you can choose your favorite veggies)
1/2 cup organic frozen blueberries
1 tablespoon pumpkin seeds
Spices: organic chive, salt, turmeric, black peppers
Step 1: Combine oats, chia seeds, and water into a small saucepan and turn heat to medium/high.
Step 2: Bring to a boil. Then, turn the heat down to low/medium and continually stir for around 3-5 minutes as the oatmeal cooks and thickens.
Step 3: Once oatmeal is at the desired consistency, add egg, veggies, blueberries, cook for 1-2 minutes, constantly stir.
Step 4: Remove from heat, add seeds and spices, serve while it is fresh and warm.
