A bowl of delicious homemade vegetable soup, Super easy and flavorful.
It will give you lots of key nutrients, including vitamins and minerals, for relatively few calories.
Prep: 15 mins
1 cup of chopped carrots
1 cup of chopped celeries
1 cup of shelled edamame
½ cup of organic corn
½ cup of green onions
½ cup of cilantro
1 clove garlic minced
Salt & pepper
In a cooking pan, heat your preferred cooking oil ( I used avocado oil) over medium heat. Add garlic and cook for 1 minute. Add all the vegetable ingredients stir-fry till it is cooked with the right texture
Crack 1 egg on top of the vegetables, cover the pan for 3 min
Add green onions and cilantro, salt & pepper before serving
