HOW TO MAKE A FRITTATA WITH WHATEVER YOU HAVE ON HAND

This healthy, veggie-heavy frittata is a great way to use up in-season produce and they’re as easy as cooking up the veggies, pouring in beaten eggs, and baking until perfectly fluffy.

Once you master the basic frittata formula, you can have fun switching up the veggies for whatever you have on hand. They’re delicious, healthy meals that can be enjoyed for breakfast, brunch, lunch, or even dinner!





Prep: 20 mins


Ingredients

  • 5 organic eggs

  • 1/2 c. milk of your choice

  • 1 c. Zucchini chopped

  • 1 c. spinach

  • 1 c. Trader Joe's frozen soycutash (soybeans, corn, and little bits of red pepper)

  • Green onions chopped

  • Turmeric, salt & pepper

  • Cheese of your choice


Directions

  • Step 1: Heat the oven. Arrange a rack in the middle of the oven and heat to 400°F.

  • Step 2: Whisk the eggs, milk, and 1/2 teaspoon salt together in a small bowl; set aside.

  • Step 3: Sauté the veggies (zucchini, frozen soycutash and green onions) for 5-6 minutes, add baby spinach, turmeric powder, salt and pepper, and sauté for another 1-2 minutes.

  • Step 4: Pour the mixture into the pan and let it cook for 2-3 minutes.

  • Step 5: Add the cheese. Sprinkle the cheese on top and let it just start to melt.

  • Step 6: Bake in the oven for 15 minutes. Then serve it up with a sprinkle of herbs for a fresh,
