HOMEMADE RED CABBAGE SAUERKRAUT

Sauerkraut is incredibly nutritious and healthy. It provides probiotics and vitamin K2, known for their health benefits, and many other nutrients. Eating sauerkraut may help you strengthen your immune system, improve your digestion, reduce your risk of certain diseases, and even lose weight.

Ingredients

  • 1 head red cabbage

  • 1 tablespoon sea salt

  • 1 teaspoon caraway seeds

  • 1 teaspoon juniper berries


Directions

  • Slice the cabbage, place it in a large bowl, toss the sliced cabbage with the sea salt (the salt will help to leach liquid from the cabbage), and let sit for 30 minutes until it starts to sweat and you see the liquid.

  • Add the juniper berries and caraway seeds or other spices of your choice.

  • Place cabbage in a jar, press down very hard using your fists or a spoon. Add the remaining liquid to the jar till it covers the cabbage completely.

  • Place fermentation crocks (or using a zip lock bag with water in it can work well as weight) on top of the cabbage to effectively continue pressuring the cabbage.

  • Cover the jar with the lid and let it sit for a minimum of 10 days or longer time if desired. It will become tarter over time.

  • Open the jar and taste it to see if it is the right flavor and texture for you. When ready, store it in the refrigerator. You can add this healthy and delicious sauerkraut to salads, soup with a nice touch of beautiful color.
