CHOPPED SPRING SALAD
While you enjoy the warm weather and beautiful blossoms spring brings, nothing is better than having a fresh, bright, and colorful salad that is packed with nutrients. Besides, it is delicious; I especially love the sweet touch of the organic raspberries in this dish. If you love salad mixed with sweet flavor, this would be a perfect choice.

Ingredients
1 c. mixed vegetables (green & red cabbage, romaine lettuce, kale, carrot), chopped
½ c. beets, chopped
Half organic avocado, chopped
½ c. chickpea, cooked,
Two small cooked beets, chopped
½ c. fresh organic raspberries
½ c pumpkin, cooked
Two tbs balsamic vinegar
¼ c. olive oil
Pink salt & pepper to taste
Directions
Step 1: Place all salad ingredients in a large bowl.
Step 2: Place dressing ingredients in a small bowl and whisk until well mixed.
Step 3: Toss salad with dressing to taste and serve immediately.
