CHOPPED SPRING SALAD

While you enjoy the warm weather and beautiful blossoms spring brings, nothing is better than having a fresh, bright, and colorful salad that is packed with nutrients. Besides, it is delicious; I especially love the sweet touch of the organic raspberries in this dish. If you love salad mixed with sweet flavor, this would be a perfect choice.

Ingredients

  • 1 c. mixed vegetables (green & red cabbage, romaine lettuce, kale, carrot), chopped

  • ½ c. beets, chopped

  • Half organic avocado, chopped

  • ½ c. chickpea, cooked,

  • Two small cooked beets, chopped

  • ½ c. fresh organic raspberries

  • ½ c pumpkin, cooked

  • Two tbs balsamic vinegar

  • ¼ c. olive oil

  • Pink salt & pepper to taste


Directions

  • Step 1: Place all salad ingredients in a large bowl.

  • Step 2: Place dressing ingredients in a small bowl and whisk until well mixed.

  • Step 3: Toss salad with dressing to taste and serve immediately.
