The Chinese egg and green onions crepe is one of my favorite breakfasts; my mom used to make this for me while I was a kid. It is simple, savory, and delicious. And it takes only 15 minutes to prep.

Prep: 15 mins


  • Two organic eggs

  • One c. all-purpose flour or other types of flour of your choice

  • 4 tbsp fresh organic green onions chopped

  • 1/2 tsp ground Himalayan sea salt, 1/2 tsp ground pepper

  • 1 tbsp olive oil

  • 1/2 c. water (or milk + water)


  • Combine eggs and water in a bowl, whisk until egg combined with water.

  • Add flour and whisk till flour is thoroughly combined and there are no lumps in the mixture.

  • Add chopped green onions, salt, pepper, and olive oil, mix well.

  • Heat nonstick skillet till warm, add 4 tbsp batter into skillet, swirl the skillet to spread the batter into a thin crepe.

  • Cook over medium heat till the bottom side is set (about 45 seconds), flip with a spatula and cook the other side until cooked through ( about 30 seconds).

  • Transfer the crepe to a plate and set it aside. Continue to cook the rest crepe in the same manner, make sure the skillet doesn't get too hot.

  • Serve immediately and enjoy 😊 .
